Quick and Easy Zucchini Noodles with Pesto
This dish features spiralized zucchini sautéed until tender and tossed with homemade or store-bought pesto. It takes about 20 minutes to prepare and serves 2 people.
Ingredients
- 2 medium zucchinis, spiralized
- 1 cup fresh basil leaves
- 1/4 cup pine nuts or walnuts
- 1/4 cup grated Parmesan cheese
- 1/4 cup olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Cherry tomatoes, halved (optional, for garnish)
- Extra Parmesan cheese for serving (optional)
Instructions
- Make the Pesto: In a food processor, combine basil leaves, nuts, Parmesan cheese, garlic, salt, and pepper. Pulse until finely chopped. With the processor running, slowly drizzle in olive oil until the mixture is smooth.
