Shrimp and Quinoa Bowl

This shrimp and quinoa bowl is a quick and tasty lunch option packed with protein. The combination of shrimp, quinoa, and fresh veggies makes it both filling and nutritious. Plus, it’s super easy to whip up in no time!

Ingredients

  • 1 cup quinoa
  • 2 cups water or broth
  • 1 pound shrimp, peeled and deveined
  • 1 avocado, sliced
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • Salt and pepper to taste
  • Fresh herbs (like cilantro or mint) for garnish

Instructions

  1. Cook the Quinoa: Rinse quinoa under cold water. In a pot, combine quinoa and water or broth. Bring to a boil, then reduce heat and simmer for about 15 minutes until the liquid is absorbed.
  2. Sauté the Shrimp: In a skillet, heat olive oil over medium heat. Add shrimp, season with salt and pepper, and cook for about 3-4 minutes until pink and opaque.
  3. Assemble the Bowl: In a bowl, layer cooked quinoa, shrimp, avocado, cucumber, and cherry tomatoes. Drizzle with lime juice and garnish with fresh herbs before serving.
