This quinoa breakfast bowl is a tasty way to start your day. Packed with protein from the quinoa and eggs, it keeps you full and satisfied. Top it off with creamy avocado and fresh tomatoes for a delicious twist!
Ingredients
- 1 cup cooked quinoa
- 1 ripe avocado, sliced
- 2 eggs
- 1 cup cherry tomatoes, halved
- Fresh spinach leaves
- Salt and pepper to taste
- Olive oil (optional)
Instructions
- Prepare the Quinoa: Cook quinoa according to package instructions and set aside.
- Poach the Eggs: In a pot of simmering water, gently crack the eggs and cook for about 3-4 minutes until the whites are set. Remove with a slotted spoon.
- Assemble the Bowl: In a bowl, layer the cooked quinoa, sliced avocado, cherry tomatoes, and spinach. Top with the poached eggs, season with salt and pepper, and drizzle with olive oil if desired.
