Easy Eggplant and Miso Stir-Fry Recipe

Ingredients
- 2 medium eggplants, sliced into bite-sized pieces
- 2 tablespoons vegetable oil
- 1 bell pepper, sliced (optional)
- 1 cup snap peas or green beans (optional)
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 3 tablespoons miso paste
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon sugar
- Chopped green onions and sesame seeds for garnish
