Egg and avocado toast is a quick and tasty lunch that packs a protein punch. The creamy avocado pairs perfectly with a poached egg, making it both satisfying and nutritious. Plus, it’s super easy to whip up in just a few minutes!
Ingredients
- 2 slices of whole grain bread
- 1 ripe avocado
- 2 large eggs
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- Toast the bread until golden brown.
- While the bread is toasting, bring a small pot of water to a gentle simmer. Crack the eggs into the water and poach for about 3-4 minutes until the whites are set.
- Meanwhile, mash the avocado in a bowl and season with salt and pepper. Spread the mashed avocado on the toasted bread, top with the poached eggs, and sprinkle with red pepper flakes if desired. Serve immediately!
