Ingredients

  • 4 large russet potatoes, cut into fries (or frozen Alexia fries)
  • 2 cups cooked chili (homemade or canned) — click

  • 2 cups shredded cheddar cheese
  • Oil for frying (vegetable, canola, or peanut oil)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Jalapeños, sliced (optional)
  • Sour cream (optional)
  • Chopped green onions (optional)

Instructions

  1. Prepare the Fries: Preheat the oven to 425°F (220°C). Toss the cut fries with olive oil, salt, pepper, garlic powder, and onion powder in a large bowl.
  2. Bake the Fries: Spread the fries in a single layer on a baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
  3. Add Chili and Cheese: Once the fries are done, remove them from the oven. Spoon the cooked chili evenly over the fries, then sprinkle shredded cheddar cheese on top.
  4. Melt the Cheese: Return the loaded fries to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
