Ingredients
- 4 medium zucchinis
- 1 pound ground turkey
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or Monterey Jack) optional
- Fresh cilantro for garnish optional
Instructions
- Prep the Zucchini: Preheat the oven to 375°F (190°C). Cut the zucchinis in half lengthwise and scoop out the seeds to create boats.
- Cook the Turkey: In a skillet over medium heat, add the ground turkey, onion, and garlic. Cook until the turkey is browned and cooked through, about 5-7 minutes.
- Add Beans and Tomatoes: Stir in the black beans, diced tomatoes, chili powder, cumin, salt, and pepper. Cook for another 5 minutes until heated through.
- Stuff the Zucchini: Spoon the turkey and bean mixture into the hollowed-out zucchinis. If desired, top with shredded cheese.
- Bake: Place the stuffed zucchinis in a baking dish and cover with foil. Bake for 25-30 minutes until the zucchinis are tender.
- Garnish and Serve: Remove from the oven, garnish with fresh cilantro if using, and serve hot.
