Healthy Stuffed Zucchini Recipe

This dish features hollowed-out zucchini filled with a savory mixture of ground turkey, black beans, diced tomatoes, and spices, then baked until tender. The recipe takes about 45 minutes from start to finish and serves 4 people.

Ingredients

  • 4 medium zucchinis
  • 1 pound ground turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or Monterey Jack) optional
  • Fresh cilantro for garnish optional

Instructions

  1. Prep the Zucchini: Preheat the oven to 375°F (190°C). Cut the zucchinis in half lengthwise and scoop out the seeds to create boats.
  2. Cook the Turkey: In a skillet over medium heat, add the ground turkey, onion, and garlic. Cook until the turkey is browned and cooked through, about 5-7 minutes.
  3. Add Beans and Tomatoes: Stir in the black beans, diced tomatoes, chili powder, cumin, salt, and pepper. Cook for another 5 minutes until heated through.
  4. Stuff the Zucchini: Spoon the turkey and bean mixture into the hollowed-out zucchinis. If desired, top with shredded cheese.
  5. Bake: Place the stuffed zucchinis in a baking dish and cover with foil. Bake for 25-30 minutes until the zucchinis are tender.
