Easy Vegetable Tempura Recipe

This tempura platter includes vegetables like sweet potatoes, bell peppers, and zucchini, all dipped in a light batter and deep-fried until golden. The dish takes about 30 minutes to prepare and serves 4 people.

Ingredients

  • 1 medium sweet potato, sliced into thin rounds
  • 1 medium zucchini, sliced into thin rounds
  • 1 bell pepper, sliced into strips
  • 1 cup all-purpose flour
  • 1 cup cold water
  • 1 egg, lightly beaten
  • 1 teaspoon baking powder
  • Salt to taste
  • Vegetable oil for frying
  • Soy sauce or tempura dipping sauce for serving

Instructions

  1. Prep the Vegetables: Wash and slice the sweet potato, zucchini, and bell pepper into desired shapes.
  2. Make the Batter: In a bowl, whisk together the flour, cold water, egg, baking powder, and salt until just combined. The batter should be lumpy.
  3. Heat the Oil: In a deep pot or fryer, heat vegetable oil to 350°F (175°C).
  4. Dip and Fry: Dip each vegetable piece into the batter, allowing excess to drip off. Carefully place them in the hot oil, frying in batches to avoid overcrowding. Fry until golden brown, about 2-3 minutes.
  5. Drain: Remove the tempura from the oil and place on paper towels to drain excess oil.
  6. Serve: Arrange the tempura on a platter and serve with soy sauce or tempura dipping sauce.
