Savory Sweet Potato and Miso Soup Recipe

Delicious Sweet Potato and Miso Soup

This soup features creamy sweet potatoes blended with miso paste, creating a rich and flavorful broth. The recipe takes about 30 minutes from start to finish and serves 4 people.

Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons miso paste (white or yellow)
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Chopped green onions or cilantro for garnish (optional)

Instructions

  1. Prep the Ingredients: Peel and dice the sweet potatoes, chop the onion, and mince the garlic.
  2. Sauté Aromatics: In a large pot, heat the sesame oil over medium heat. Add the chopped onion and garlic, and sauté until fragrant and translucent (about 3-4 minutes).
  3. Cook the Sweet Potatoes: Add the diced sweet potatoes and vegetable broth to the pot. Bring to a boil, then reduce the heat to medium-low and simmer for 15-20 minutes, or until the sweet potatoes are tender.
