Easy Savory Stuffed Bell Peppers Recipe

These stuffed bell peppers are filled with a savory mixture of ground beef, cooked rice, diced tomatoes, and spices, then baked until the peppers are tender. The recipe takes about 1 hour from start to finish and serves 4 people.

Ingredients

  • 4 large bell peppers (any color)
  • 1 pound ground beef or turkey
  • 1 cup cooked rice
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt, adjust to taste
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese (cheddar or mozzarella) optional
  • Fresh parsley for garnish optional

Instructions

  1. Prep the Peppers: Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes.
  2. Cook the Filling: In a large skillet, brown the ground beef or turkey over medium heat. Add the chopped onion and garlic, cooking until the onion is translucent. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Mix well and remove from heat.
  3. Stuff the Peppers: Spoon the meat and rice mixture into each bell pepper, packing it down gently. If desired, top each pepper with shredded cheese.
  4. Bake: Place the stuffed peppers upright in a baking dish. Add a little water to the bottom of the dish to help steam the peppers. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is melted.
