Easy Spinach and Feta Stuffed Chicken Breast

This dish features chicken breasts filled with a mixture of sautéed spinach, crumbled feta cheese, and garlic. The chicken is then baked until golden and juicy, making it a satisfying option for any dinner table. The recipe takes about 45 minutes from start to finish and serves 4 people.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional for topping)
  • 1 tablespoon fresh lemon juice (optional)

Instructions

  1. Prep the Chicken: Preheat the oven to 375°F (190°C). Butterfly each chicken breast by slicing it horizontally, being careful not to cut all the way through.
  2. Make the Filling: In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add chopped spinach and cook until wilted. Remove from heat and stir in feta cheese, oregano, salt, and pepper.
  3. Stuff the Chicken: Spoon the spinach and feta mixture into each chicken breast. Secure with toothpicks if necessary.
  4. Bake: Place the stuffed chicken breasts in a baking dish. Optionally, sprinkle breadcrumbs on top for extra crunch. Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  5. Serve: Drizzle with fresh lemon juice before serving, if desired. Enjoy with your choice of sides.
