This savory spinach and feta omelet is a quick and tasty way to kickstart your day. Packed with protein and flavor, it’s perfect for busy mornings when you need something satisfying. Plus, it’s super easy to whip up!
Ingredients
- 2 large eggs
- 1 cup fresh spinach, chopped
- 1/4 cup feta cheese, crumbled
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 slice whole-grain bread (optional)
Instructions
- In a bowl, whisk the eggs with a pinch of salt and pepper. Set aside.
- Heat olive oil in a non-stick skillet over medium heat. Add the chopped spinach and sauté until wilted.
- Pour the eggs over the spinach and cook until the edges start to set. Sprinkle feta cheese on one half, fold the omelet, and cook for another minute until fully set. Serve with toasted bread if desired.
