Spicy Chickpea and Quinoa Bowl

This Spicy Chickpea and Quinoa Bowl is a quick and tasty dinner option that packs a protein punch. With chickpeas, quinoa, and fresh veggies, it’s both filling and nutritious. Top it off with avocado and cilantro for a burst of flavor!

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can chickpeas, drained and rinsed
  • 1 cup diced tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1 avocado, sliced
  • Fresh cilantro for garnish

Instructions

  1. Cook the Quinoa: Rinse quinoa under cold water. In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for about 15 minutes until liquid is absorbed.
  2. Prepare the Chickpeas: In a skillet, heat olive oil over medium heat. Add chickpeas, diced tomatoes, cumin, paprika, cayenne, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally.
  3. Assemble the Bowl: Fluff the cooked quinoa with a fork and divide it into bowls. Top with the chickpea mixture, sliced avocado, and fresh cilantro. Serve warm and enjoy!
