Easy Wild Mushroom Galette Recipe

This galette features a golden-brown crust filled with a mixture of sautéed wild mushrooms, garlic, and fresh herbs, topped with cheese for added richness. The preparation time is about 20 minutes, and the total cooking time is around 40 minutes, serving 6 people.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 4-6 tablespoons ice water
  • 2 cups mixed wild mushrooms, cleaned and sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1/2 cup grated Gruyère or Parmesan cheese
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions

  1. Make the Dough: In a bowl, combine flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in ice water, a tablespoon at a time, until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.
  2. Prepare the Filling: In a skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute. Add the mushrooms and thyme, cooking until the mushrooms are tender and any liquid has evaporated. Season with salt and pepper, then remove from heat.
  3. Roll Out the Dough: On a floured surface, roll out the dough into a 12-inch circle. Transfer to a baking sheet lined with parchment paper.
  4. Assemble the Galette: Spread the mushroom mixture in the center of the dough, leaving a 2-inch border. Sprinkle cheese over the mushrooms. Fold the edges of the dough over the filling, pleating as necessary.
  5. Brush the Dough: Brush the edges of the dough with the beaten egg for a golden finish.
  6. Bake: Preheat the oven to 400°F (200°C). Bake the galette for 30-35 minutes or until the crust is golden brown. Let cool slightly before slicing and serving.
