Ingredients

  • 12 ounces pasta (penne or fusilli work well)
  • 1 pound Italian sausage (mild or spicy, casings removed)
  • 4 cups fresh spinach, roughly chopped
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped fresh basil for garnish (optional)

Instructions

  1. Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Sauté the Sausage: In a large skillet, heat olive oil over medium heat. Add the sausage and cook until browned and cooked through, breaking it up with a spoon as it cooks (about 5-7 minutes).
  3. Add Garlic and Spinach: Stir in the minced garlic and red pepper flakes, cooking for an additional minute. Then, add the chopped spinach and cook until wilted (about 2-3 minutes).
  4. Combine with Pasta: Add the cooked pasta to the skillet and toss everything together. Stir in the grated Parmesan cheese and season with salt and pepper to taste.
  5. Serve: Plate the pasta and garnish with chopped fresh basil if desired. Serve hot.
