These lamb chops are seasoned and seared in a hot skillet, creating a savory crust that locks in moisture. The recipe takes about 20 minutes from start to finish, making it a quick yet impressive dish to serve. Pair with your favorite sides for a complete meal.
Ingredients
- 4 bone-in lamb chops (loin or rib)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- 2 tablespoons butter
Instructions
- Prepare the Marinade: In a bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper. Coat the lamb chops with the marinade and let them sit at room temperature for about 15 minutes.
- Heat the Skillet: Place a cast iron skillet over medium-high heat until it’s skillet-hot.
- Sear the Lamb Chops: Add the marinated lamb chops to the skillet. Cook for about 4-5 minutes on one side until browned and crisp. Flip the chops using tongs and add butter to the skillet.
- Baste and Cook: As the second side cooks for another 4-5 minutes, spoon the melted butter over the chops for added flavor. Use a meat thermometer to check for doneness; aim for 130°F for medium-rare.
- Rest and Serve: Once cooked, remove the chops from the skillet and let them rest for 5 minutes. This allows the juices to absorb back into the meat. Serve on a platter with your choice of sides.
