Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups mixed vegetables (such as bell peppers, zucchini, and carrots)
  • Lemon slices for garnish
  • Fresh parsley for garnish

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Marinade: In a bowl, mix olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
