Refreshing Musubi Lettuce Wraps with Pineapple Salsa
These musubi lettuce wraps feature marinated protein, typically spam or tofu, wrapped in crisp lettuce leaves and topped with a refreshing pineapple salsa. The dish takes about 30 minutes to prepare and serves 4 people.
Ingredients
- 1 cup cooked sushi rice
- 4 slices of spam or firm tofu, cooked and sliced
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 head of butter or romaine lettuce, leaves separated
- 1 cup diced pineapple
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 2 tablespoons cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- Prepare the Rice: Cook sushi rice according to package instructions and let it cool slightly.
- Marinate the Protein: In a bowl, mix soy sauce and sesame oil. Add the cooked spam or tofu slices and let them marinate for about 10 minutes.
- Make the Pineapple Salsa: In another bowl, combine diced pineapple, red onion, jalapeño, cilantro, lime juice, salt, and pepper. Mix well and set aside.
