Easy Lentil Soup with Spinach Recipe
This soup features tender lentils simmered with onions, carrots, and garlic, finished with fresh spinach for a burst of color and nutrients. The recipe takes about 45 minutes from start to finish and serves 6 people.
Ingredients
- 1 cup dried lentils, rinsed
- 1 medium onion, chopped
- 2 medium carrots, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups fresh spinach, chopped
- 1 teaspoon ground cumin
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon lemon juice (optional)
Instructions
- Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and carrots, and sauté until softened (about 5 minutes). Stir in the minced garlic and cook for an additional minute.
