Easy Japanese Chicken Curry Recipe
This dish features chicken simmered with potatoes and carrots in a savory curry sauce made from curry roux. The recipe takes about 50 minutes from start to finish and serves 4 people.
Ingredients
- 1 lb (450g) chicken thighs, cut into bite-sized pieces
- 2 medium potatoes, peeled and diced
- 2 medium carrots, sliced
- 1 bell pepper, sliced
- 1 onion, chopped
- 3 cups water
- 1 package (100g) Japanese curry roux (mild or medium spicy)
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- Prep the Ingredients: Cut the chicken into bite-sized pieces, peel and dice the potatoes, slice the carrots and bell pepper, and chop the onion.
- Sauté the Chicken: In a large pot, heat the vegetable oil over medium heat. Add the chicken pieces and cook until browned on all sides.
- Add Vegetables: Stir in the chopped onion and cook until translucent. Then add the diced potatoes and sliced bell pepper and carrots, mixing well.
- Simmer: Pour in the water and bring to a boil. Reduce the heat to low, cover, and simmer for about 20 minutes, or until the vegetables are tender.
- Add Curry Roux: Break the curry roux into pieces and add it to the pot. Stir until the roux is fully dissolved and the sauce thickens, cooking for an additional 5-10 minutes.
- Season and Serve: Adjust seasoning with salt and pepper if needed. Serve the curry hot over cooked rice.
