Easy Japanese Chicken Curry Recipe

This dish features chicken simmered with potatoes and carrots in a savory curry sauce made from curry roux. The recipe takes about 50 minutes from start to finish and serves 4 people.

Ingredients

  • 1 lb (450g) chicken thighs, cut into bite-sized pieces
  • 2 medium potatoes, peeled and diced
  • 2 medium carrots, sliced
  • 1 bell pepper, sliced
  • 1 onion, chopped
  • 3 cups water
  • 1 package (100g) Japanese curry roux (mild or medium spicy)
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Prep the Ingredients: Cut the chicken into bite-sized pieces, peel and dice the potatoes, slice the carrots and bell pepper, and chop the onion.
  2. Sauté the Chicken: In a large pot, heat the vegetable oil over medium heat. Add the chicken pieces and cook until browned on all sides.
  3. Add Vegetables: Stir in the chopped onion and cook until translucent. Then add the diced potatoes and sliced bell pepper and carrots, mixing well.
