Easy Japanese Chicken Curry Rice Recipe

Ingredients

  • 1 lb (450g) chicken thighs, cut into bite-sized pieces
  • 1 medium onion, sliced
  • 2 medium carrots, sliced
  • 2 medium potatoes, diced
  • 2 tablespoons vegetable oil
  • 4 cups water
  • 1 package (3.5 oz) Japanese curry roux (mild, medium, or hot)
  • 2 cups cooked rice
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Sauté Chicken: In a large pot, heat the vegetable oil over medium heat. Add the chicken pieces and cook until browned on all sides.
  2. Add Vegetables: Stir in the sliced onion, carrots, and potatoes. Cook for about 5 minutes until the vegetables start to soften.
