Greek Yogurt Chicken Salad

This Greek yogurt chicken salad is a tasty and healthy option for lunch. It’s packed with protein and has a nice crunch from the walnuts and grapes. Plus, it’s super easy to make and perfect for meal prep!

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup plain Greek yogurt
  • 1/2 cup grapes, halved
  • 1/2 cup walnuts, chopped
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 4 cups mixed greens

Instructions

  1. In a large bowl, combine the shredded chicken, Greek yogurt, grapes, walnuts, Dijon mustard, and lemon juice. Mix well.
  2. Season with salt and pepper to taste.
  3. Serve the chicken salad over a bed of mixed greens.
