Ingredients

  • 1 crown roast of pork (about 8-10 ribs, frenched and tied)
  • 2 tablespoons kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons Dijon mustard
  • 1/2 cup apricot preserves or marmalade
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons soy sauce
  • 4 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh sage, chopped
  • 1 tablespoon fresh thyme, chopped
  • Zest of 1 lemon
  • 1/4 cup water

Instructions

  1. Prepare the Roast: Dry-brine the crown roast by rubbing it with kosher salt and pepper. Let it rest in the refrigerator for at least 4 hours or overnight.
  2. Make the Glaze: In a small saucepan, combine apricot preserves, apple cider vinegar, soy sauce, minced garlic, garlic powder, rosemary, sage, thyme, and lemon zest. Simmer over low heat until the mixture is syrupy, about 5-10 minutes.
  3. Preheat the Oven: Preheat your oven to 325°F (163°C).
