This shrimp scampi recipe combines tender shrimp with a rich garlic butter sauce, finished with a splash of white wine and fresh herbs. The dish takes about 20 minutes to prepare and serves 4 people.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup dry white wine
- Juice of 1 lemon
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
- 8 ounces linguine or spaghetti, cooked according to package instructions
- Lemon wedges for serving
Instructions
- Cook the Pasta: Prepare the linguine or spaghetti according to package instructions. Drain and set aside.
- Sauté Shrimp: In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Add the minced garlic and red pepper flakes, sautéing until fragrant (about 1 minute).
- Add Shrimp: Add the shrimp to the skillet, seasoning with salt and pepper. Cook until the shrimp turn pink and opaque, about 2-3 minutes per side.
- Deglaze the Pan: Pour in the white wine and lemon juice, scraping the bottom of the skillet to release any browned bits. Allow the sauce to simmer for 2-3 minutes.
- Finish the Sauce: Stir in the remaining 2 tablespoons of butter and chopped parsley, mixing until the butter is melted and the sauce is well combined.
- Combine and Serve: Toss the cooked pasta with the shrimp and sauce until evenly coated. Serve immediately with lemon wedges on the side.
