Classic Egg Fried Rice Recipe

Quick and Easy Egg Fried Rice

This egg fried rice features fluffy rice stir-fried with scrambled eggs, peas, and carrots, seasoned with soy sauce for a savory flavor. The dish takes about 20 minutes to prepare and serves 4 people.

Ingredients

  • 4 cups cooked rice (preferably day-old)
  • 2 large eggs, beaten
  • 1 cup mixed vegetables (peas and carrots)
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 green onions, chopped
  • Salt and pepper to taste
  • Optional: cooked chicken, shrimp, or tofu for added protein

Instructions

  1. Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat.
  2. Scramble the Eggs: Add the beaten eggs to the skillet and scramble until fully cooked. Remove the eggs from the skillet and set aside.
  3. Stir-Fry the Vegetables: In the same skillet, add the mixed vegetables and stir-fry for 2-3 minutes until tender.
  4. Add the Rice: Add the cooked rice to the skillet, breaking up any clumps. Stir-fry for another 3-4 minutes until heated through.
  5. Combine Ingredients: Return the scrambled eggs to the skillet, add soy sauce, and mix everything together. Season with salt and pepper to taste.
  6. Garnish and Serve: Stir in chopped green onions and serve hot.
