Easy Chicken Liver Mousse Recipe

This mousse features chicken livers cooked with onions and garlic, blended with butter and cream until silky smooth. The preparation time is about 30 minutes, and it can be chilled for a few hours or overnight before serving.

Ingredients

  • 1 pound chicken livers, cleaned and trimmed
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup unsalted butter, divided
  • 1/4 cup heavy cream
  • 1 tablespoon brandy or cognac (optional)
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Sauté Aromatics: In a skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onion and garlic, cooking until softened and fragrant (about 5 minutes).
  2. Cook the Livers: Add the cleaned chicken livers to the skillet. Season with salt and pepper, and cook until browned and just cooked through (about 5-7 minutes). If using, add the brandy and cook for an additional minute.
  3. Blend the Mixture: Transfer the liver mixture to a food processor. Add the remaining butter and heavy cream, then blend until smooth and creamy. Adjust seasoning as needed.
  4. Chill: Transfer the mousse to a serving dish or individual ramekins. Cover and refrigerate for at least 2 hours, or until set.
  5. Serve: Garnish with fresh herbs if desired. Serve chilled with toasted bread or crackers.
