Delicious Blini with Caviar and Crème Fraîche

These homemade blini are made from a batter of flour, eggs, and milk, cooked to golden perfection. Topped with crème fraîche and caviar, they offer a delightful balance of flavors and textures. The recipe serves about 4 people and takes approximately 40 minutes to prepare.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 tablespoons melted butter
  • 1 cup crème fraîche
  • 4 ounces caviar (your choice)
  • Chives or dill for garnish (optional)

Instructions

  1. Prepare the Batter: In a mixing bowl, whisk together the flour, milk, eggs, sugar, salt, and baking powder until smooth. Stir in the melted butter.
  2. Cook the Blini: Heat a non-stick skillet over medium heat and lightly grease it. Pour small amounts of batter (about 2 tablespoons) into the skillet to form small pancakes. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  3. Repeat: Continue cooking the blini in batches, adding more butter to the skillet as needed, until all the batter is used.
  4. Assemble: Place a blini on a serving plate, top with a dollop of crème fraîche, and add a spoonful of caviar on top.
  5. Garnish: Optionally, sprinkle with chopped chives or dill for added flavor and presentation.
  6. Serve: Enjoy the blini warm or at room temperature as an elegant appetizer.
