Delicious Butternut Squash and Sage Wontons

These wontons are filled with a mixture of roasted butternut squash, fresh sage, and ricotta cheese, then boiled or pan-fried for a crispy finish. The recipe yields about 24 wontons and takes approximately 1 hour to prepare and cook.

Ingredients

  • 1 medium butternut squash, peeled and diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh sage, chopped
  • 1 package wonton wrappers
  • Water for sealing wontons
  • Soy sauce or dipping sauce for serving

Instructions

  1. Roast the Squash: Preheat the oven to 400°F (200°C). Toss the diced butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
  2. Prepare the Filling: In a bowl, combine the roasted squash, ricotta cheese, Parmesan cheese, and chopped sage. Mix until well combined and adjust seasoning if necessary.
  3. Assemble the Wontons: Place a wonton wrapper on a clean surface. Spoon about 1 teaspoon of the filling into the center. Moisten the edges with water, fold the wrapper over to form a triangle, and press to seal. Repeat with remaining wrappers and filling.
  4. Cook the Wontons: Bring a large pot of water to a boil. Add the wontons in batches and cook for 3-4 minutes until they float to the surface. Alternatively, pan-fry in a little oil until golden brown on both sides.
  5. Serve: Remove the wontons and drain. Serve warm with soy sauce or your favorite dipping sauce.
