Easy Cilantro Lime Chicken and Black Bean Rice Bowl

This dish features marinated chicken cooked to perfection, served over a bed of fluffy cilantro lime rice and black beans. The recipe takes about 40 minutes from start to finish and serves 4 people.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1 can (15 oz) black beans, rinsed and drained
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced and zested
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups chicken broth or water
  • Optional toppings: avocado, salsa, shredded cheese, sour cream

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, lime juice, lime zest, garlic powder, cumin, salt, and pepper. Add chicken breasts and marinate for at least 15 minutes.
  2. Cook the Rice: In a medium saucepan, bring chicken broth or water to a boil. Add rice, reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked. Remove from heat and stir in chopped cilantro and lime juice.
  3. Cook the Chicken: Heat a skillet over medium heat. Remove chicken from marinade and cook for 6-7 minutes on each side or until fully cooked. Let rest for a few minutes before slicing.
  4. Assemble the Bowl: In serving bowls, layer cilantro lime rice, black beans, and sliced chicken. Add any optional toppings as desired.
  5. Serve: Enjoy your Cilantro Lime Chicken and Black Bean Rice Bowl warm.
