Easy Quick Vegetable Soup Recipe

This vegetable soup features a colorful mix of carrots, celery, bell peppers, and green beans simmered in a flavorful broth. The recipe serves 4 and is perfect for a light lunch or dinner.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 1 bell pepper, diced
  • 1 cup green beans, trimmed and cut into pieces
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent (about 3-4 minutes).
  2. Add the sliced carrots, chopped celery, and diced bell pepper. Cook for another 5 minutes, stirring occasionally.
  3. Stir in the green beans, vegetable broth, diced tomatoes, and dried oregano. Bring to a boil, then reduce the heat and let it simmer for 15-20 minutes until the vegetables are tender.
  4. Season with salt and pepper to taste. Serve hot, garnished with fresh parsley if desired.
