Quick and Easy Vegetarian Tacos
These tacos feature a filling made from sautéed bell peppers, onions, and black beans, topped with ripe avocado slices. The recipe takes about 30 minutes to prepare and serves 4 people.
Ingredients
- 8 small corn or flour tortillas
- 1 can (15 oz) black beans, drained and rinsed
- 1 medium onion, chopped
- 1 bell pepper, chopped (any color)
- 2 ripe avocados, sliced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)

Instructions
