- 1 cup jasmine rice or long-grain rice
- 1 can (13.5 oz) coconut milk
- 1 cup water
- 1 tablespoon lime juice
- 1 teaspoon lime zest
- 1/2 teaspoon salt
- 1 tablespoon chopped fresh cilantro for garnish (optional)
Instructions
- Rinse the Rice: Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
- Combine Ingredients: In a medium saucepan, combine rinsed rice, coconut milk, water, lime juice, lime zest, and salt.
- Cook the Rice: Bring the mixture to a simmer over medium heat. Once it starts to simmer, reduce the heat to low and cover, cooking for 18-20 minutes or until the rice is tender and the liquid is absorbed.
- Fluff and Serve: Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with chopped cilantro if using before serving.
