- Press cancel to stop sauté mode. Add carrots, Yukon gold potatoes, and sweet potato. Stir to combine.
- Pour in the chicken broth and add smoked paprika and thyme. Stir well.
- Return the browned ribs to the Instant Pot, nestling them among the vegetables.
- Secure the lid and set the valve to sealing. Cook on high pressure for 35 minutes.
- Let the pressure release naturally for 10 minutes, then do a quick release for any remaining pressure.
- Open the lid, discard any excess fat if needed, and serve hot, garnished with fresh parsley if desired.
