Description

This chilled soup features ripe watermelon blended with tomatoes, cucumbers, bell peppers, and a dash of lime juice for a refreshing flavor. The recipe takes about 15 minutes to prepare and serves 4 people.


Ingredients

  • 4 cups ripe watermelon, cubed
  • 1 cup ripe tomatoes, diced
  • 1 cucumber, peeled and diced
  • 1 bell pepper, diced (red or yellow for color)
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons lime juice
  • 1/4 cup fresh basil or mint, chopped
  • Salt and pepper to taste
  • Optional: diced avocado for garnish
  • Optional: extra herbs for garnish


Instructions

  1. Prepare the Ingredients: Cube the watermelon, dice the tomatoes, cucumber, bell pepper, and red onion, and chop the fresh herbs.
  2. Blend the Base: In a blender, combine the watermelon, tomatoes, cucumber, bell pepper, and red onion. Blend until smooth.
  3. Season: Stir in the lime juice, chopped herbs, salt, and pepper. Blend briefly again to combine the flavors.
  4. Chill: Transfer the mixture to a bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
