Delicious Garlic Butter Mushroom Risotto

This risotto features Arborio rice cooked slowly in broth, enriched with garlic, butter, and sautéed mushrooms. The dish takes about 30 minutes to prepare and serves 4 people.

Ingredients

  • 1 cup Arborio rice
  • 4 cups vegetable or chicken broth
  • 1 cup mushrooms sliced (such as cremini or button)
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1/2 cup white wine (optional)
  • 1/2 cup grated Parmesan cheese
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley chopped for garnish

Instructions

  1. Prepare the Broth: In a saucepan, heat the broth and keep it warm over low heat.
