Ingredients
Scale
- 1 cup long-grain white rice (or basmati/jasmine rice)
- 2 cups water
- 1 tablespoon olive oil or avocado oil
- 1/2 teaspoon kosher salt
- 1 bay leaf
- 1 lime, juiced and zested
- 1/4 cup fresh cilantro, chopped
- 1 garlic clove, minced (optional)
- 1-2 green onions or scallions, chopped for garnish (optional)
Instructions
- Rinse the Rice: Rinse the rice under cold water until the water runs clear to remove excess starch. This will help achieve fluffy rice.
- Cook the Rice: In a saucepan, combine the rinsed rice, water, olive oil, kosher salt, and bay leaf. Bring to a boil, reduce the heat to low, cover the pot, and simmer for about 18-20 minutes or until the water is absorbed.
- Fluff the Rice: Once cooked, remove the pot from heat and let it rest covered for 5 minutes. After resting, fluff the rice gently with a fork.
- Add Flavor: Stir in lime juice, lime zest, chopped cilantro, and minced garlic (if using) until evenly combined. Adjust seasoning to taste.
- Garnish and Serve: Transfer the cilantro lime rice to a serving dish, garnish with green onions or scallions if desired, and serve warm as a side dish to your favorite meals.
