Description

This cilantro lime rice features fluffy long-grain white rice tossed with lime juice, lime zest, and freshly chopped cilantro. The dish is quick to prepare, requiring about 25 minutes, and serves as a perfect side for various meals.


Ingredients

  • 1 cup long-grain white rice (or basmati/jasmine rice)
  • 2 cups water
  • 1 tablespoon olive oil or avocado oil
  • 1/2 teaspoon kosher salt
  • 1 bay leaf
  • 1 lime, juiced and zested
  • 1/4 cup fresh cilantro, chopped
  • 1 garlic clove, minced (optional)
  • 1-2 green onions or scallions, chopped for garnish (optional)


Instructions

  1. Rinse the Rice: Rinse the rice under cold water until the water runs clear to remove excess starch. This will help achieve fluffy rice.
  2. Cook the Rice: In a saucepan, combine the rinsed rice, water, olive oil, kosher salt, and bay leaf. Bring to a boil, reduce the heat to low, cover the pot, and simmer for about 18-20 minutes or until the water is absorbed.
  3. Fluff the Rice: Once cooked, remove the pot from heat and let it rest covered for 5 minutes. After resting, fluff the rice gently with a fork.
  4. Add Flavor: Stir in lime juice, lime zest, chopped cilantro, and minced garlic (if using) until evenly combined. Adjust seasoning to taste.
  5. Garnish and Serve: Transfer the cilantro lime rice to a serving dish, garnish with green onions or scallions if desired, and serve warm as a side dish to your favorite meals.
