This salad features cubed seedless watermelon, diced cucumber, thinly sliced red onion, and feta cheese, all tossed in a zesty lime juice and olive oil dressing. It takes just 15 minutes to prepare and serves as a delightful cold salad for 4 people.

Ingredients

Scale
  • 4 cups cubed seedless watermelon
  • 2 cups diced English cucumber
  • 1/2 cup crumbled feta cheese
  • 1/4 cup thinly sliced red onion
  • 1/4 cup fresh mint leaves, roughly chopped
  • 1/4 cup fresh basil leaves, roughly chopped
  • 2 tablespoons lime juice
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon honey drizzle
  • Salt and black pepper to taste
  • Balsamic glaze for drizzling (optional)

Instructions

  1. Combine Ingredients: In a large bowl, combine the cubed watermelon, diced cucumber, crumbled feta cheese, and thinly sliced red onion.
  2. Make the Dressing: In a small bowl, whisk together the lime juice, extra-virgin olive oil, and honey. Season with salt and black pepper to taste.
  3. Toss Gently: Pour the dressing over the salad and toss gently to combine. Add the chopped mint and basil, and toss once more to distribute the herbs.
