Description

This One Pot Mushroom Stroganoff is a creamy, rich dish featuring earthy mushrooms and sautéed onions, combined with wide egg noodles and a touch of paprika. It’s a hearty meal that’s quick to prepare, ensuring that you can enjoy a satisfying dinner without spending hours in the kitchen.

Ingredients

Scale
  • 8 oz wide egg noodles
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 8 oz mushrooms, sliced
  • 2 cups beef broth (or vegetable broth to make it vegetarian)
  • 1 teaspoon paprika
  • 1 cup sour cream
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add the chopped onion and sliced mushrooms. Sauté until the onions are translucent and the mushrooms are softened, about 5-7 minutes.
  2. Cook the Noodles: Add the beef broth and bring to a boil. Stir in the wide egg noodles and paprika, then reduce the heat to a simmer. Cook for about 10-12 minutes, or until the noodles are tender and the broth is mostly absorbed.
  3. Stir in Creaminess: Remove the pot from heat, and gently fold in the sour cream until combined. Season with salt and pepper to taste.
  4. Serve: Ladle the stroganoff into bowls, garnish with fresh parsley if desired, and enjoy warm.
