- 1 cup artichoke hearts, quartered

- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and black pepper to taste
Instructions
- Cook the Pasta: In a large pot, bring salted water to a boil. Add the bow tie pasta and cook according to package instructions until al dente. Drain the pasta and rinse under cold water to stop the cooking process.
- Prepare the Vegetables: In a large mixing bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, kalamata olives, black olives, artichoke hearts, parsley, and basil.
- Make the Dressing: In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, lemon juice, garlic, oregano, salt, and black pepper until emulsified.
- Combine: Add the rinsed pasta to the large mixing bowl with the vegetables. Pour the dressing over the pasta salad and toss gently to combine. Finally, sprinkle the top with crumbled feta cheese.
