Description

This delicious recipe features succulent pieces of marinated chicken, juicy pineapple, and colorful bell peppers, all threaded onto kabob skewers and grilled to perfection. With a cook time of just 15 minutes, these kabobs serve hot and are ideal for any grilling occasion.


Ingredients

  • 1 pound chicken breast or thighs, cut into 1-inch pieces
  • 1 cup fresh pineapple, cut into chunks
  • 1 red bell pepper, cut into squares
  • 1 green bell pepper, cut into squares
  • 1 onion, cut into wedges (red or yellow)
  • 1/4 cup soy sauce
  • 1/4 cup pineapple juice
  • 2 tablespoons brown sugar
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Kabob skewers (wooden or metal)


Instructions

  1. Prep the Marinade: In a bowl, whisk together soy sauce, pineapple juice, brown sugar, honey, minced garlic, grated ginger, and olive oil. Season with salt and pepper. Set aside 1/4 cup for basting.
  2. Soak Wooden Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
  3. Marinate Chicken: In a large bowl or zip-top bag, combine chicken pieces with the marinade. Let it marinate for at least 30 minutes or up to 2 hours in the refrigerator.
  4. Assemble Kabobs: Thread marinated chicken, pineapple chunks, bell peppers, and onion onto the skewers, alternating pieces for vibrant colors.
  5. Preheat Grill: Preheat the grill to medium-high heat.
  6. Grill Kabobs: Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally until chicken is cooked through and the edges are charred. Brush with reserved marinade during the last few minutes of grilling.
  7. Serve: Remove from the grill and serve hot. These kabobs pair well with rice or a fresh salad for a complete meal.
