Description

This Green Beans Almondine recipe features fresh green beans that are blanched and then sautéed with toasted almond slices, garlic, and shallots. The dish is finished with a drizzle of lemon juice and zest, creating a refreshing flavor profile. It serves as a delightful vegetable side that pairs well with a variety of main courses.

Ingredients

Scale
  • 1 pound fresh green beans, trimmed
  • 1/2 cup sliced almonds
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 shallot, finely chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • Salt and black pepper to taste
  • Fresh herbs for garnish, such as flat leaf parsley

Instructions

  1. Blanch the Green Beans: Bring a large pot of salted water to a boil. Add the trimmed green beans and cook for 3-4 minutes until tender-crisp. Drain and immediately transfer the beans to an ice bath to stop the cooking process. Once cooled, pat dry.
  2. Toast the Almonds: In a large skillet over medium heat, melt the butter and olive oil. Add the sliced almonds and toast until golden brown, stirring occasionally, about 2-3 minutes. Remove the almonds from the skillet and set aside.
  3. Sauté the Aromatics: In the same skillet, add the minced garlic and chopped shallot. Sauté for 1-2 minutes until fragrant and translucent.
  4. Combine Ingredients: Add the blanched green beans to the skillet and toss to coat with the garlic and shallots. Cook for an additional 2-3 minutes until heated through.
  5. Finish the Dish: Drizzle the sautéed green beans with lemon juice and zest. Season to taste with salt and black pepper. Stir in the toasted almonds.
  6. Serve: Transfer the green beans to a platter, garnish with fresh herbs, and serve warm.
