Ingredients
Scale
- 2 cups all-purpose flour or spelt flour
- 1 teaspoon active dry yeast
- 1 tablespoon cane sugar
- 1 teaspoon sea salt
- 1/2 teaspoon baking powder
- 3/4 cup Greek yogurt
- 1/4 cup warm water
- 4-5 garlic cloves, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon chives, chopped
- 1/4 cup unsalted butter, melted
- 1/4 cup grated parmesan cheese
- Black pepper to taste
- Olive oil for cooking
Instructions
- Activate the Yeast: In a mixing bowl, combine warm water, yeast, and cane sugar. Let it sit for about 5 minutes until it becomes frothy.
- Make the Dough: In a large bowl, mix the flour, baking powder, and sea salt. Gradually add the yogurt and the yeast mixture, stirring with a wooden spoon until a soft dough forms.
- Knead the Dough: Turn the dough onto a lightly floured surface and knead for about 5 minutes until smooth. Let it rest for 20 minutes.
- Prepare Garlic Herb Butter: In a small bowl, combine melted butter, minced garlic, chopped parsley, chives, and a pinch of black pepper.
- Shape the Flatbreads: Divide the dough into equal portions and roll each piece into a flat disc about 1/4 inch thick.
- Cook the Flatbreads: Heat a non-stick skillet or cast iron pan over medium-high heat. Brush one side of the flatbread with garlic herb butter and place it in the skillet, cooking for 2-3 minutes until golden brown. Flip and repeat on the other side.
- Serve Warm: Remove from heat, brush with additional garlic herb butter if desired, and serve warm with soup or as a wrap.
