- 1 bay leaf

Instructions
- Sear the Beef: In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the beef chuck and sear until browned on all sides. Remove from the pot and set aside.
- Sauté the Vegetables: In the same pot, add onions and garlic. Sauté until onions are translucent. Add carrots and potatoes, cooking for another 5 minutes.
- Combine Ingredients: Return the seared beef to the pot. Pour in beef broth and add thyme, bay leaf, salt, and pepper. Stir well to combine.
