Description

This creamy tomato pasta is a delightful blend of al dente pasta, ripe tomatoes, aromatic garlic, and fresh basil, all simmered together in one pot. The addition of cream creates a luscious sauce that clings to the pasta perfectly.


Ingredients

  • 12 oz pasta of choice (penne, fusilli, or spaghetti work well)
  • 1 can (14 oz) diced tomatoes
  • 1 cup heavy cream
  • 4 cloves garlic minced
  • 1 cup fresh basil leaves chopped
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Water or vegetable broth as needed


Instructions

  1. Sauté Garlic: In a large pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  2. Combine Ingredients: Add the diced tomatoes (with juice), heavy cream, and pasta to the pot. Pour in enough water or broth to cover the pasta. Season with salt and pepper.
  3. Cook: Bring to a boil, then reduce the heat to a simmer. Cook, stirring occasionally, until the pasta is al dente and the sauce has thickened, about 10-12 minutes.
  4. Add Basil and Cheese: Stir in the chopped basil and grated Parmesan cheese until melted and creamy. Adjust seasoning if necessary.
  5. Serve: Divide the creamy tomato pasta among plates and sprinkle with extra Parmesan and basil for garnish.
