Description

These garlic butter roasted mushrooms are a delicious addition to any meal. The mushrooms are tossed in olive oil and a garlic butter mixture, then roasted in a single layer on a baking sheet until tender and juicy. This recipe takes about 25 minutes from start to finish and serves 4 people.


Ingredients

  • 1 pound button mushrooms, whole or sliced
  • 1 pound cremini mushrooms, whole or sliced
  • 4 tablespoons olive oil
  • 4 tablespoons melted butter
  • 4 garlic cloves, minced
  • 1 teaspoon salt, adjust to taste
  • 1/2 teaspoon black pepper
  • 1 tablespoon soy sauce
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon fresh thyme or 1 teaspoon dried thyme
  • 1 teaspoon Italian seasoning
  • 1/4 cup fresh parsley, chopped for garnish


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, mix together the olive oil, melted butter, minced garlic, salt, black pepper, soy sauce, balsamic vinegar, thyme, and Italian seasoning.
  3. Toss the mushrooms in the butter mixture until they are evenly coated.
  4. Spread the mushrooms in a single layer on a baking sheet or roasting pan.
  5. Roast in the preheated oven for 15-20 minutes, stirring halfway through, until the mushrooms are tender and browned at the edges.
  6. Remove from the oven and garnish with chopped parsley. Serve warm.
