Instructions
- Prepare the Asparagus: Trim the tough ends off the asparagus and rinse under cold water.
- Steam the Asparagus: Place the asparagus in a steamer basket over boiling water. Cover and steam for about 4-6 minutes, or until tender but still crisp.
- Make the Hollandaise Sauce: In a heatproof bowl, whisk together the egg yolks and lemon juice. Place the bowl over a pot of simmering water (double boiler) and whisk continuously until the mixture thickens.
- Add Butter: Slowly drizzle in the melted butter while whisking until the sauce is smooth and creamy. Season with salt, pepper, and cayenne pepper if desired.
- Serve: Arrange the steamed asparagus on a serving platter and drizzle with the hollandaise sauce. Serve immediately.
