Description

Ingredients

  • 1 pound fresh asparagus, trimmed
  • 3 large egg yolks
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Pinch of cayenne pepper (optional)


Instructions

  1. Prepare the Asparagus: Trim the tough ends off the asparagus and rinse under cold water.
  2. Steam the Asparagus: Place the asparagus in a steamer basket over boiling water. Cover and steam for about 4-6 minutes, or until tender but still crisp.
  3. Make the Hollandaise Sauce: In a heatproof bowl, whisk together the egg yolks and lemon juice. Place the bowl over a pot of simmering water (double boiler) and whisk continuously until the mixture thickens.
  4. Add Butter: Slowly drizzle in the melted butter while whisking until the sauce is smooth and creamy. Season with salt, pepper, and cayenne pepper if desired.
  5. Serve: Arrange the steamed asparagus on a serving platter and drizzle with the hollandaise sauce. Serve immediately.
